Cranberry Bliss Bars


I’m not generally a huge fan of Starbucks, I much prefer Coffee Bean and Tea Leaf for all the caffeination needs. But I’ll occasionally go into Starbucks and a few years ago tried and fell in love with the Cranberry Bliss Bars. They are so amazing but are also ridiculously expensive. So after searching for the perfect recipe to recreate I decided to make my own.

1 1/2 sticks of unsalted butter, at room temperature
1 1/2 cups of light brown sugar (can use dark brown sugar but it will taste off)
2 1/4 to 2 1/2 cups of all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 – 1/2 teaspoon cinnamon
2 eggs
3/4 – 1 teaspoon vanilla extract
1/2 cup dried cranberries
6 ounces white chocolate

8 ounces cream cheese, softened
1 cup confectioners sugar
6 ounces white chocolate
1/2 cup dried cranberries


Bar Prep
1) Pre-heat the oven to 350 degrees Fahrenheit. Line a 13 x 9 in pan with parchment paper.

2) In a medium bowl melt butter. Stir in brown sugar. Set aside and let it cool.

3) Whisk together the flour, baking powder, salt and cinnamon. Set aside.

4) Transfer the butter and sugar mixture into the bowl of a stand mixer once it has cooled.

5) With the paddle attachment beat in the eggs and vanilla on medium speed.

6) Gradually add in the flour, scraping the sides of the bowl as needed.

7) Remove the bowl from the stand mixer and fold in the cranberries and white chocolate into the batter.


8) Spread the batter out evenly in the prepared pan.

9) Bake for approximately 20 minutes. Check the bar for readiness with a toothpick in the center. When the toothpick comes out clean, remove the bars from the oven. And transfer the pan to a wire rack to cool.

Frosting Prep
1) In the bowl of a stand mixer beat the cream cheese and powered sugar on low speed with the paddle attachment until well blended.

2) Melt the white chocolate on 20-30 second intervals in the microwave. Make sure to stir in between each interval so that the white chocolate doesn’t burn.

3) Add about a third to half of the melted white chocolate into the frosting and mix until well incorporated.

4) Using an offset spatula, spread the frosting evenly over the bars.

5) Sprinkle the cranberries over the top of the frosting.

6) Transfer the remaining white chocolate into a piping bag and with a small tip drizzle over the frosting and cranberries.


Cut the bars into triangles. Store the bars in the refrigerator. For best taste remove the bars from the refrigerator approximately an hour before serving.
